The main general-purpose model shop in Brighton used to be ModelZone (ex-"Model Aerodrome"), near the Churchill Square Shopping Centre.

However, since it shut down in 2013, it's been up to to other more specialised businesses to take up the slack.

The ones that spring to mind are:
LSA Models in Hove, near Hove station, focuses mostly on plastic kits. Games Workshop have a store by The Lanes, which naturally concentrates on Warhammer modelling, but the paints and structural parts are pretty general-purpose. Stationers and art supplies shop Clarkes on Bond street, central Brighton have an upstairs section that sells useful things like plaster of Paris and balsa wood.

Other than these, Brighton (as a rather "arty" city) does have a good selection of toy shops and craft shops.
